Lumberjacks at Lunch

A traditional Cookhouse in Humboldt County with a small crew.

Another group within Humboldt County that has a distinct food culture is the loggers of the 1800s and 1900s. Cookhouses in redwood country were an institution, feeding ravenous loggers mind-boggling amounts of calories. A cookhouse functioned much as a glorified cafeteria buffet - loggers would come in from a long day of moving timber and sit down to a couple thousand calorie meal that could include whole roasted chickens, entire pies, and dozens of cookies. Logging companies learned the hard way to feed their workers well - as many would riot if a favored cook was fired, or a greasy one hired.
